It offers a tasty, healthy twist on classic pizza flavors, accommodating flexible dietary preferences with simple ingredients and customizable options.

Ingredients

Scale

Vegetables

  • 3 medium fresh zucchini, thinly sliced
  • 1 cup diced bell peppers
  • 1/2 cup diced red onion
  • 2 cloves garlic, freshly minced
  • Fresh herbs (basil or oregano), chopped, for garnish

Protein

  • 1 lb smoky turkey, cooked and browned

Cheese and Sauces

  • 2 cups plant-based cheese (mozzarella (plant-based) or cheddar (plant-based))
  • 1 1/2 cups natural tomato sauce
  • 1 tablespoon vegetarian Worcestershire sauce

Other Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Vegetables: Thinly slice the zucchini and dice the bell peppers and red onion. In a skillet, heat olive oil over medium heat and sauté the onions and bell peppers until softened. Add minced garlic and cook for 1 more minute to release its aroma.
  2. Cook the Smoky Turkey: In a separate pan, cook the smoky turkey until browned and cooked through. Stir in the vegetarian Worcestershire sauce for added depth. Remove from heat and set aside.
  3. Assemble the Layers: Spread a thin layer of natural tomato sauce on the bottom of a baking dish. Layer half of the zucchini slices evenly over the sauce. Add half of the cooked turkey, followed by the sautéed vegetables, and sprinkle some plant-based cheese over the top. Repeat the layers, finishing with a generous topping of plant-based cheese and a sprinkle of fresh herbs.
  4. Set with Natural Gelling Agent: Mix the natural gelling agent into a small amount of natural tomato sauce and gently pour it evenly over the layered casserole to help bind the ingredients during baking.
  5. Bake the Casserole: Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, until the cheese is melted, bubbly, and the zucchini is tender but still holds its shape. Let the casserole cool for a few minutes before serving.

Notes

  • Slice zucchini evenly to ensure consistent cooking and optimal texture.
  • Sauté vegetables before layering to enhance their sweetness and reduce moisture.
  • Use fresh herbs to add brightness and enhance flavor just before serving.
  • Allow the casserole to rest after baking to help it set and improve slicing.
  • Choose plant-based cheeses that melt well for a creamy and visually appealing finish.
