  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 1/2 cup plant-based cheese (optional)

Instructions

  1. Prepare the Lentils: Rinse the lentils under cold water and cook them in the vegetable broth until tender but still firm to the bite. This ensures they maintain their shape and texture in the casserole.
  2. Sauté the Vegetables: Heat olive oil in a large pan over medium heat. Add the chopped onion, minced garlic, diced carrots, and celery. Sauté until the vegetables are softened and fragrant, creating a flavorful base for the casserole.
  3. Combine Ingredients: To the sautéed vegetables, add the cooked lentils, diced tomatoes (natural), vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), ground cumin, smoked paprika, salt, and black pepper. Stir thoroughly to combine all ingredients evenly.
  4. Add Natural Gelling Agent and Spinach: Sprinkle the natural gelling agent into the mixture and mix in the chopped spinach. Stir until the casserole mixture thickens slightly and the spinach wilts.
