Description

Tortellini Pasta Salad is a vibrant, easy-to-make dish perfect for any meal occasion. Combining cheese tortellini (plant-based), crisp vegetables, smoked turkey bacon, and a creamy plant-based cheese dressing infused with fresh herbs and natural gelling agent, this salad delivers a blend of fresh, smoky, and tangy flavors with delightful textures. Ready in under 30 minutes, it is ideal for quick lunches, potlucks, or a refreshing side dish.

Ingredients

Pasta and Protein

  • Cheese tortellini (plant-based) – 12 oz (fresh or refrigerated)
  • Smoked turkey bacon – 6 slices
  • Plant-based cheese – 1 cup, cubed or shredded

Fresh Vegetables and Herbs

  • Cherry tomatoes – 1 cup, halved
  • Cucumber – 1 medium, diced
  • Red onion – 1/4 cup, thinly sliced
  • Fresh basil leaves – 1/4 cup, torn

Dressing

  • Vegetarian Worcestershire sauce (natural) – 2 tablespoons
  • Apple cider vinegar (natural) – 1 tablespoon
  • Olive oil – 3 tablespoons
  • Natural gelling agent – 1/2 teaspoon
  • Salt – 1/2 teaspoon, or to taste
  • Black pepper – 1/4 teaspoon, freshly cracked, or to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil and add the cheese tortellini. Cook for 3-4 minutes or until tender yet firm to the bite. Drain and rinse under cold water to cool, then set aside.
  2. Prepare the Smoked Turkey Bacon: While the tortellini cooks, crisp the smoked turkey bacon in a skillet over medium heat. Transfer to paper towels to drain excess oil and chop into bite-sized pieces.
  3. Chop Fresh Vegetables and Herbs: Slice the cherry tomatoes in halves, dice the cucumber into small cubes, thinly slice the red onion, and tear fresh basil leaves into smaller pieces to release their aroma.
  4. Make the Dressing: In a small bowl, whisk together vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), olive oil, natural gelling agent, salt, and pepper until smooth and emulsified.
  5. Combine Everything: In a large mixing bowl, gently toss the cooled tortellini with chopped smoked turkey bacon, fresh vegetables, basil, and plant-based cheese. Pour the dressing over and carefully mix to coat all ingredients evenly.
  6. Chill Before Serving: Refrigerate the salad for at least 30 minutes to allow flavors to meld and the dressing to set slightly, enhancing texture and taste.

Notes

  • Do not overcook tortellini to maintain a tender yet firm texture.
  • Ensure the pasta and vegetables are cooled before mixing to preserve freshness and crunch.
  • Fresh herbs like basil dramatically elevate flavor; try alternatives such as parsley or mint for variation.
  • Adjust salt and pepper after tossing with dressing to achieve the perfect balance.
  • This salad tastes better when prepared ahead, allowing flavors to develop.
