Instructions

  1. Prep the Tofu and Veggies: Drain the firm tofu and pat dry with paper towels to remove excess moisture. Cut into small cubes for even browning. Dice the carrots, chop the green onions, and mince the garlic cloves in preparation for cooking.
  2. Cook the Turkey Bacon: Heat a large skillet or wok over medium heat. Cook the smoky turkey bacon until crisp but not burnt. Remove bacon from the pan and set aside, leaving some fat in the pan to enhance flavor.
  3. Sauté Tofu and Vegetables: Add tofu cubes to the pan and cook until golden on all sides. Add garlic, carrots, and peas, stirring to combine and soften the vegetables while preserving their bright colors.
  4. Combine Rice and Seasonings: Stir in the cooked jasmine rice, breaking up any clumps with a spatula. Pour in grape juice (natural) to deglaze the pan, then add soy sauce (natural), vegetarian Worcestershire sauce (natural), and a drizzle of sesame oil. Mix thoroughly so each grain is coated.
  5. Finish and Garnish: Return the turkey bacon to the pan, gently tossing it with the rice mixture. Add freshly ground black pepper and chopped green onions. Cook for another minute or two, then remove from heat and serve hot.
