Ingredients

Scale

Chicken and Sauce

  • 1 lb chicken breast, cut into thin strips
  • 2 tablespoons natural peanut butter
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 teaspoon chili flakes (optional)
  • Water, as needed to thin sauce
  • 1 tablespoon cooking oil

Vegetables and Wraps

  • 1 small cucumber, sliced into thin matchsticks
  • 2 medium carrots, sliced into thin matchsticks
  • 1 red bell pepper, sliced into thin matchsticks
  • 3 green onions, finely chopped
  • 8 rice paper wraps or large lettuce leaves
  • Fresh cilantro, chopped (for garnish)
  • Chopped peanuts or cashews (optional, for topping)
  • Thin slices of red chili (optional, for garnish)

Instructions

  1. Prepare the Chicken: Cut the chicken breast into thin strips. Heat oil in a skillet over medium heat and cook chicken strips until golden and cooked through, about 6 to 8 minutes. Season with minced garlic, minced ginger, and a splash of vegetarian Worcestershire sauce (natural) to infuse flavor.
  2. Make the Peanut Sauce (natural): While the chicken cooks, whisk together natural peanut butter, apple cider vinegar, vegetarian Worcestershire sauce (natural), minced garlic, and chili flakes if using. Add water gradually to achieve a smooth and creamy consistency suitable for spreading and dipping.
  3. Prepare the Vegetables: Slice cucumber, carrots, and red bell pepper into thin matchsticks. Finely chop green onions. These fresh vegetables add crunch and balance the richness of the peanut sauce.
  4. Assemble the Wraps: Lay out the rice paper wraps or lettuce leaves. Spread 2 tablespoons of peanut sauce (natural) down the center. Add a layer of cooked chicken strips followed by the crunchy vegetables. Drizzle a little extra peanut sauce (natural) on top. Fold or roll tightly to enclose the fillings.
  5. Serve and Enjoy: Serve the Thai Peanut Chicken Wraps immediately, with additional peanut sauce (natural) on the side for dipping. Garnish with fresh cilantro, chopped nuts, and slices of red chili if desired for extra flavor and presentation.

Notes

  • Use fresh vegetables and aromatics to enhance flavor and texture.
  • Do not overfill the wraps to make folding easier and neater.
  • Adjust peanut sauce (natural) consistency by adding water for better spreading and dipping.
  • Cut chicken uniformly to ensure even cooking and prevent dryness.
  • Chill the assembled wraps for 10 minutes before serving if preferred cooler.
  • Store leftover peanut sauce (natural) in an airtight container in the refrigerator for up to one week; stir well before use.
  • Cook chicken separately when reheating; assemble fresh wraps to maintain crispness of vegetables and rice paper.
