Instructions

  1. Prepare the Vegetables: Wash and slice the yellow squash and zucchini into thin rounds to ensure even cooking. Finely chop the onion and mince the garlic so they blend seamlessly into the casserole’s base.
  2. Cook the Bacon and Aromatics: In a large skillet, heat olive oil and sauté smoked turkey bacon pieces until crispy and fragrant. Remove bacon from skillet. In the same pan, cook the onions and garlic until soft and golden, infusing the oil with rich aroma.
  3. Combine Ingredients: In a mixing bowl, gently toss together the sliced squash, sautéed onions and garlic, crispy turkey bacon, fresh parsley and thyme, creamy plant-based cheese, and vegetarian Worcestershire sauce (natural). Add apple cider vinegar (natural) and season with salt and pepper to taste.
  4. Add the Natural Gelling Agent: Sprinkle the natural gelling agent evenly over the mixture and stir gently to distribute without clumping. This will help the casserole hold together as it bakes.
