Description

Spicy Salmon Sushi Bake is a comforting and bold-flavored casserole that layers sushi rice, spicy salmon, and plant-based cheese into a warm, cheesy bake with a crispy top. This easy-to-make dish combines the best elements of sushi in a convenient baked form, perfect for sharing any night of the week.

Ingredients

Scale

Base

  • 2 cups sushi rice
  • 3 tbsp apple cider vinegar (natural)
  • 1 tbsp sugar
  • 1 tsp salt

Spicy Salmon Topping

  • 12 oz fresh salmon, flaked
  • 1/2 cup plant-based mayonnaise (natural)
  • 12 tbsp chili paste (natural), adjust to taste
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 2 green onions, chopped
  • 1/2 tsp natural gelling agent

Additional Layers and Garnish

  • 1 cucumber or 1 avocado, thinly sliced
  • 1 cup plant-based cheese, shredded
  • 2 sheets nori seaweed, torn into strips
  • Toasted sesame seeds (optional for garnish)

Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions. In a small bowl, mix apple cider vinegar (natural), sugar, and salt. Toss the cooked rice with this mixture to add classic sushi tang and shine. Set aside to cool slightly.
  2. Mix the Spicy Salmon Topping: In a bowl, combine flaked fresh salmon with plant-based mayonnaise (natural), chili paste (natural), vegetarian Worcestershire sauce (natural), chopped green onions, and natural gelling agent. Mix well until creamy and spreadable with the right texture.
  3. Assemble the Bake: Grease a baking dish and spread the sushi rice evenly as the bottom layer. Arrange thin slices of cucumber or avocado over the rice. Spread the spicy salmon mixture generously on top. Sprinkle shredded plant-based cheese evenly over the surface.
  4. Bake Until Perfect: Preheat the oven to 375°F (190°C). Place the assembled dish in the oven and bake for 15 to 20 minutes until the cheese melts, browns slightly, and the topping is hot and bubbly. Remove and allow to cool just enough to serve.
  5. Garnish and Serve: Top with torn nori strips and optionally toasted sesame seeds for added flavor and texture. Cut into squares and serve immediately.

Notes

  • Ensure sushi rice is sticky but not mushy to hold the layers well.
  • Use the freshest salmon available for optimal flavor and texture.
  • Adjust the amount of chili paste to control the spice level.
  • Allow the bake to rest slightly before cutting to maintain structure.
  • Choose a plant-based cheese that melts smoothly for a golden crust.
  • Add crunchy cucumber or creamy avocado toppings for contrasting textures.
