Description

Spicy Corn Slaw is a fresh, vibrant, and zesty side dish that combines sweet corn with a lively kick of heat, crisp vegetables, and a tangy plant-based dressing. Perfect for brightening up any meal, this colorful salad offers a satisfying crunch and bold flavors, making it ideal as a side dish, taco topping, or a light meal with added plant-based protein.

Ingredients

Scale

Vegetables and Herbs

  • 2 cups fresh corn kernels (grilled or steamed)
  • 3 cups shredded cabbage
  • 1 cup diced red bell pepper
  • 3 chopped green onions
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño or fresno chili, minced (adjust to taste)

Dressing

  • 2 tablespoons lime juice (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons olive oil
  • 3 tablespoons plant-based mayo with natural gelling agent
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Corn: Cook fresh corn kernels by grilling them for a smoky flavor or boiling them quickly until tender. Set aside to cool so the corn retains its sweet crunch.
  2. Chop and Shred Your Veggies: While the corn cools, finely shred the cabbage, dice the red bell pepper, chop the green onions, and mince the chili peppers. Smaller cuts make it easier to mix everything evenly.
  3. Make the Dressing: In a bowl, whisk together lime juice, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), olive oil, and plant-based mayo with natural gelling agent until smooth. Season with salt and freshly ground black pepper to taste.
  4. Combine and Toss: In a large mixing bowl, combine the cooled corn with all the chopped vegetables and fresh cilantro. Pour the dressing over the ingredients and toss gently so everything is coated but the slaw keeps its crunch.
  5. Chill Before Serving: Let the Spicy Corn Slaw chill for at least 30 minutes to allow the flavors to meld and enhance the texture for each bite.

Notes

  • Use fresh corn and vegetables for the best crunch and flavor.
  • Add chili peppers gradually to control heat level.
  • Add dressing in parts to prevent sogginess.
  • Serve the slaw chilled to amplify its refreshing qualities.
  • Use plant-based mayo with natural gelling agent for a light, creamy dressing texture.
