Description

Southern-Style Honey Butter Cornbread Poppers combine fluffy cornbread with smoky turkey bacon and creamy plant-based butter for a perfect balance of sweet, savory, and buttery flavors. These bite-sized snacks are ideal as appetizers, party finger foods, or a delightful breakfast treat, boasting a golden, tender texture with a luscious honey butter glaze.

Ingredients

Scale

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon natural baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup plant-based butter, softened
  • 1/4 cup natural honey
  • 2 large eggs
  • 1 cup plant-based milk
  • 1 teaspoon vegetarian Worcestershire sauce (natural)

Add-ins

  • 1/2 cup smoked turkey bacon, finely chopped

Glaze

  • 2 tablespoons plant-based butter
  • 2 tablespoons natural honey

Instructions

  1. Prepare the wet and dry ingredients: In a medium bowl, whisk together the all-purpose flour, cornmeal, natural baking powder, granulated sugar, and salt. In a separate large bowl, beat the plant-based butter and honey until smooth and creamy, then add the eggs, plant-based milk, and vegetarian Worcestershire sauce (natural). Mix well until fully combined.
  2. Combine ingredients and add bacon: Slowly incorporate the dry ingredients into the wet mixture, stirring gently until you have a smooth batter. Fold in the finely chopped smoked turkey bacon evenly so each popper will have smoky flavor.
  3. Bake the poppers: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with plant-based butter and spoon the batter into each cavity, filling about three-quarters full. Bake for 15-18 minutes or until golden brown and a toothpick inserted comes out clean.
  4. Prepare honey butter glaze: While the poppers bake, warm plant-based butter and honey together in a small saucepan over low heat until melted and thoroughly mixed. Remove from heat and keep warm for glazing.
  5. Glaze and serve: Once the poppers are out of the oven, immediately brush them generously with the warm honey butter glaze. Allow to cool slightly before serving for best texture and flavor.

Notes

  • Use room temperature ingredients for smooth combination and fluffier poppers.
  • Do not overmix batter to maintain a light and tender texture.
  • Chop bacon finely for better flavor distribution and easy popping.
  • Brush glaze immediately after baking to seal moisture and add shiny sweetness.
  • Use a mini muffin tin for perfect bite-sized portions and even cooking.
