  3. First Rise: Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise at room temperature for 4 to 6 hours until doubled in size.
  4. Shape the Pretzel Bites: Turn the dough onto a floured surface, divide it into small equal portions, roll each into bite-sized logs, and cut into small pieces. Shape as desired.
  5. Boil in Baking Soda Bath: Bring water and baking soda to a gentle boil. Carefully drop pretzel bites into the boiling bath for about 30 seconds. Remove with a slotted spoon and drain well.
