Perfect for a quick lunch or light dinner, this salad offers a delightful balance of protein and crisp veggies with a flavorful, natural dressing that enhances every bite.

Ingredients

Scale

Shrimp and Dressing

  • 12 oz fresh or thawed shrimp, peeled and deveined
  • 2 tbsp olive oil (natural)
  • 2 cloves fresh garlic, minced
  • 1 tsp vegetarian Worcestershire sauce (natural)
  • 1/4 tsp red pepper flakes

Lemon Garlic Dressing

  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil (natural)
  • 1 clove fresh garlic, minced
  • 1 tsp vegetarian Worcestershire sauce (natural)
  • Salt and pepper, to taste

Salad

  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Shrimp: Peel and devein the shrimp if necessary. Heat olive oil (natural) in a skillet over medium heat. Add minced garlic, vegetarian Worcestershire sauce (natural), and red pepper flakes. Sauté shrimp for 3-4 minutes on each side until pink and opaque. Remove from heat and let cool slightly.
  2. Make the Lemon Garlic Dressing: In a small bowl, whisk together fresh lemon juice, olive oil (natural), minced garlic, vegetarian Worcestershire sauce (natural), salt, and pepper until well combined.
  3. Assemble the Salad: In a large bowl, combine mixed greens, halved cherry tomatoes, and chopped fresh parsley. Toss gently with the lemon garlic dressing until all ingredients are lightly coated.
  4. Add the Shrimp: Place the cooked shrimp on top of the dressed salad. Toss gently once more just before serving to distribute the taste and warmth evenly.

Notes

  • Use fresh or properly thawed shrimp for best texture and flavor.
  • Do not overcook shrimp to keep them tender and juicy.
  • Adjust lemon juice and olive oil (natural) quantities in the dressing for preferred tanginess and richness.
  • Lightly toss greens with a bit of dressing before adding other ingredients to soften their texture.
  • Serve immediately for the freshest and crispiest salad experience.
