Shrimp Ceviche Ingredients
- 1 lb fresh shrimp, peeled and deveined
- 3/4 cup natural lime juice (about 6 limes)
- 2 ripe tomatoes, diced
- 1 cup cucumber, diced
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 small jalapeño, finely chopped (optional)
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1 tbsp apple cider vinegar (natural)
- Salt, to taste
- Black pepper, to taste
- 1 tsp natural gelling agent (optional)
Instructions
- Prepare the Shrimp: Start with peeled, deveined shrimp. If using raw shrimp, quickly poach them in simmering water until just opaque, then chill immediately in ice water to stop the cooking process and maintain a tender texture.
- Marinate in Lime Juice: Combine the shrimp with plenty of fresh lime juice in a glass or ceramic bowl. Allow it to sit for 15-20 minutes so the acidity naturally “cooks” the shrimp, making them flavorful and safe to eat.
- Chop and Combine Vegetables: Dice tomatoes, cucumbers, red onion, and optional jalapeño into uniform small pieces to ensure consistent texture. Finely chop cilantro and mix all vegetables into the shrimp and lime juice mixture.
- Season and Enhance Flavor: Add vegetarian Worcestershire sauce (natural) and apple cider vinegar (natural) to deepen the flavor profile. Season with salt and black pepper to taste. Stir in natural gelling agent if using, to help bind the mixture.
- Chill and Serve: Refrigerate the ceviche for at least 30 minutes to allow flavors to meld. Serve cold, garnished as desired with avocado slices, extra cilantro, or thin radish slices.
Notes
- Use the freshest shrimp available for the best texture and flavor.
- Be generous but careful with lime juice to balance acidity without overwhelming other flavors.
- Dice all components uniformly for an even texture.
- Chill properly to let flavors meld but avoid sogginess by not over-chilling.
- Adjust jalapeño quantity gradually to control spice level.
