Ingredients

Scale

For the Patties

  • 1 lb ground beef or plant-based mince
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup bread crumbs (or gluten-free crumbs/oats)
  • 1/4 cup plant-based milk
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • Salt and pepper to taste

For the Mushroom Gravy

  • 8 oz mushrooms, finely sliced (cremini, shiitake, or oyster optional)
  • 1 small onion, diced
  • 2 tablespoons flour (gluten-free if needed)
  • 2 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon natural gelling agent
  • Salt and pepper to taste

To Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare the Patties: In a large bowl, combine the ground beef or plant-based mince with finely chopped onion, minced garlic, bread crumbs, plant-based milk, vegetarian Worcestershire sauce (natural), salt, and pepper. Mix gently but thoroughly until all ingredients are just combined. Shape the mixture into oval-shaped patties.
  2. Cook the Patties: Heat a skillet over medium heat and lightly grease it. Add the patties and cook for 4-5 minutes on each side until they develop a golden-brown crust and are nearly cooked through. Remove the patties and set aside, leaving the browned bits in the pan.
  3. Make the Mushroom Gravy: In the same skillet, sauté the sliced mushrooms and diced onions until softened and browned. Sprinkle the flour over the mixture and stir constantly to cook out the raw flour taste. Gradually whisk in vegetable broth and apple cider vinegar, stirring until a rich gravy forms. Add the natural gelling agent and stir until you achieve a smooth, glossy texture.
  4. Combine and Simmer: Return the patties to the skillet and spoon generous amounts of the mushroom gravy over each. Cover and simmer gently for 10-15 minutes to let the flavors meld and ensure the patties are cooked through.
  5. Garnish and Serve: Sprinkle fresh chopped parsley over the Salisbury Steak. Serve warm with your favorite sides such as creamy mashed potatoes (plant-based), buttered green beans, roasted carrots, or steamed broccoli.

Notes

  • Do not overmix the patties to keep them tender.
  • Use fresh mushrooms to maximize umami flavor in the gravy.
  • Allow the gravy to simmer long enough to thicken and develop a silky texture with the natural gelling agent.
  • Adjust seasoning with salt and pepper after combining the patties and gravy.
  • Cook patties on medium heat to brown evenly without burning while ensuring a juicy interior.
