Ingredients

Scale

Salad Ingredients

  • 2 cups fresh mixed greens (baby spinach, arugula, romaine)
  • 1/2 cup julienned carrots
  • 1/2 cup julienned cucumbers
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 2 tablespoons toasted sesame seeds

Asian Dressing Ingredients

  • 3 tablespoons rice vinegar (natural)
  • 2 tablespoons soy sauce (natural, gluten-free)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon honey or maple syrup (natural)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon natural gelling agent (optional)

Instructions

  1. Prepare the vegetables: Wash and dry all vegetables thoroughly. Slice the carrots and cucumbers into thin julienne strips, finely chop the cilantro and green onions, and thinly slice the red bell pepper. Toss the fresh mixed greens in a large bowl to form the salad base.
  2. Make the dressing: In a small bowl, whisk together rice vinegar (natural), soy sauce (natural, gluten-free), grated fresh ginger, minced garlic, honey or maple syrup (natural), and sesame oil. If desired, whisk in the natural gelling agent until the dressing is smooth and slightly thickened.
  3. Combine and toss: Pour the dressing over the prepared vegetables. Toss gently but thoroughly, ensuring each leaf and vegetable is lightly coated with the flavorful dressing.
  4. Garnish and serve: Sprinkle toasted sesame seeds on top and add extra cilantro or green onions for garnish. Serve immediately to enjoy fresh textures.

Notes

  • Use fresh vegetables for the best crispness and flavor.
  • Adjust sweetness, acidity, and saltiness of the dressing to your taste.
  • Toss salad gently to avoid bruising delicate greens.
  • Toast sesame seeds in a dry pan to enhance their nutty flavor.
  • Make the dressing ahead to let flavors meld.
