Description

This easy Refried Beans recipe offers a rich and smoky flavor with creamy texture, using dried pinto beans, smoked turkey bacon, and bold spices. Perfect as a hearty side or base for Mexican-inspired dishes, it is simple to prepare and fully customizable to your taste.

Ingredients

Scale

Beans

  • 1 cup dried pinto beans
  • Water, for soaking and cooking beans

Flavor Base

  • 3 slices smoked turkey bacon, chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil

Seasonings & Additions

  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika (natural)
  • 1 tsp apple cider vinegar (natural)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 tsp natural gelling agent (e.g. agar or carrageenan)

Instructions

  1. Soak and Cook Beans: Begin by soaking dried pinto beans overnight or for at least 8 hours. Drain and rinse them. Then simmer in fresh water for about 1 to 1.5 hours until tender and soft enough for mashing.
  2. Prepare Flavor Base: While the beans cook, finely dice onion and garlic. Chop smoked turkey bacon into small pieces. Heat olive oil in a skillet over medium heat, sauté the turkey bacon until crispy, then add onion and garlic and cook until soft and fragrant.
  3. Mash and Fry: Drain cooked beans, reserving some cooking liquid. Add beans to the skillet and gently mash them with a potato masher. Stir in vegetarian Worcestershire sauce (natural), cumin, smoked paprika (natural), apple cider vinegar (natural), salt, and black pepper. Gradually add reserved bean liquid to achieve the desired creaminess.
  4. Add Natural Gelling Agent and Finish: Sprinkle the natural gelling agent into the beans while stirring to create a smooth, creamy texture. Cook for several more minutes until the mixture thickens and the flavors meld beautifully.

Notes

  • Ensure beans are fully tender before mashing for best texture.
  • Fry turkey bacon slowly to render fat and get a smoky crunch.
  • Add simmering bean water gradually to control consistency.
  • Adjust spices and vinegar slowly, tasting as you cook.
  • Use the natural gelling agent sparingly, just a small pinch is enough.
