Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 tbsp natural granulated sugar
  • 1 1/4 cups warm water (110°F / 43°C)
  • 1 tsp salt

Boiling Solution

  • 10 cups water
  • 2/3 cup natural baking soda

Toppings & Fillings

  • Vegetarian Worcestershire sauce (natural), for brushing
  • Coarse salt, for sprinkling
  • 1 cup diced smoked turkey bacon
  • 1 to 1 1/2 cups shredded plant-based cheese
  • Small cubes of plant-based cheese (optional, for stuffed bites)

Additional Ingredients

  • Natural gelling agent (for homemade dips or cheese blends, optional)

Instructions

  1. Prepare the Dough: In a large bowl, combine warm water, natural granulated sugar, and active dry yeast. Let it sit for 5-7 minutes until foamy. Add the all-purpose flour and salt, then knead the mixture until smooth and elastic, about 8 to 10 minutes. Cover the dough and allow it to rise for about 1 hour or until it doubles in size.
  2. Shape the Pretzel Bites: After rising, punch down the dough and divide it into small pieces roughly walnut-sized. Roll each piece into a ball or twist. For stuffed bites, flatten each piece slightly, place a small cube of plant-based cheese inside, and seal.
  3. Boil with Baking Soda: Bring a large pot of water to a gentle boil, then add natural baking soda. Drop pretzel bites in batches into the boiling solution for about 30 seconds each. Remove them with a slotted spoon and place on a parchment-lined baking sheet.
  4. Add Toppings and Bake: Lightly brush each pretzel bite with vegetarian Worcestershire sauce (natural) or olive oil. Sprinkle with coarse salt or preferred seasoning. Scatter diced smoked turkey bacon and top with shredded plant-based cheese. Bake in a preheated oven at 425°F (220°C) for 12 to 15 minutes until golden brown and cheese is bubbling.

Notes

  • Use warm water to activate yeast properly for a perfect rise.
  • Do not skip the baking soda bath as it creates the classic pretzel crust and flavor.
  • Cut dough into evenly sized pieces to ensure uniform baking.
  • Brush pretzel bites with vegetarian Worcestershire sauce (natural) for a rich, savory glaze.
  • Serve pretzel bites warm for best taste and texture.
