Description

Pavlova Cookies are light and crispy meringue treats topped with fluffy plant-based cream and fresh fruits. Combining an airy crunch with a soft center, these delightful cookies are perfect for afternoon tea or special occasions. Made with simple ingredients and quick baking, they are customizable with various fruit and flavor toppings to suit every taste.

Ingredients

Scale

Meringue Base

  • 4 large egg whites (room temperature)
  • 1 cup caster sugar
  • 1/2 teaspoon natural vanilla extract
  • 1/2 teaspoon natural gelling agent
  • 1/4 teaspoon apple cider vinegar

Cream Topping

  • 1 cup plant-based cream, whipped to soft peaks

Optional Toppings

  • Fresh fruits such as berries, kiwi slices, passion fruit pulp, mango, or tropical fruits
  • Shredded coconut (plant-based)
  • Toasted almonds or pistachios (optional)
  • Melted dark chocolate (plant-based) for drizzle (optional)
  • Lemon or orange zest (for citrus twist variation)

Instructions

  1. Prepare the Egg Whites: Ensure your mixing bowl and whisk are impeccably clean to prevent any fat or moisture from interfering with the meringue. Whip the egg whites together with the apple cider vinegar until soft peaks form. Gradually add caster sugar while continuing to whip until stiff, glossy peaks appear.
  2. Add Natural Vanilla Extract and Natural Gelling Agent: Gently fold in the natural vanilla extract and natural gelling agent into the meringue mixture. This enhances the flavor and stabilizes the structure so your cookies hold their crispy shell and soft center.
  3. Pipe or Spoon onto Baking Sheet: Using a piping bag or two spoons, create small round mounds on parchment-lined baking sheets. Aim for uniform size to ensure even baking.
  4. Bake at Low Temperature: Bake the cookies at a low temperature (around 90-100°C or 200-210°F) for 60 to 90 minutes to slowly dry them out without browning. This ensures the perfect crispness.
  5. Cool Completely: Once baked, allow the cookies to cool fully on the tray. This step is crucial as the cookies will firm up to their ideal texture. Optionally, turn off the oven and let the cookies cool inside for extra crispiness.
  6. Add Plant-Based Cream and Fruits: Whip your plant-based cream to soft peaks and generously spread or pipe on top of each cookie. Garnish with fresh fruits or your preferred toppings for a finishing touch.

Notes

  • Use room temperature eggs for better volume when whipping.
  • Add sugar gradually to dissolve completely and achieve a smooth, shiny meringue.
  • Make the cookies on a dry day to avoid humidity softening the crisp shell.
  • Follow instructions carefully when mixing in the natural gelling agent to ensure stability.
  • Cool the cookies inside the oven after baking to enhance crispness.
