Description

These Oatmeal Fudge Bars combine chewy old-fashioned oats with rich dark chocolate chips (plant-based) for a wholesome and indulgent treat. Easy to make with simple pantry ingredients, they deliver a perfect balance of texture and flavor ideal for any occasion.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups old-fashioned oats
  • 3/4 cup all-purpose flour
  • 1/4 cup natural brown sugar
  • 1 teaspoon natural gelling agent
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup vegetable oil
  • 1 tablespoon apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon pure vanilla extract (natural)

Mix-ins

  • 3/4 cup dark chocolate chips (plant-based)

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper to ensure easy removal of the bars. Measure all ingredients accurately for best results.
  2. Mix the Dry Ingredients: In a large bowl, combine the old-fashioned oats, all-purpose flour, natural gelling agent, salt, and natural brown sugar. Stir well until evenly blended to form the dry base of the bars.
  3. Add the Wet Ingredients: Mix in the vegetable oil, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), and pure vanilla extract (natural). Combine thoroughly until the mixture becomes a sticky, cohesive dough.
  4. Fold in Chocolate Chips (Plant-based): Gently fold the dark chocolate chips (plant-based) into the mixture, distributing them evenly to ensure every bar has pockets of melted chocolate.
  5. Press into Pan and Bake: Press the mixture firmly and evenly into the prepared baking pan, smoothing the top surface. Bake in the preheated oven for 25-30 minutes or until the edges turn golden and a toothpick inserted in the center comes out with a few moist crumbs.
  6. Cool & Slice: Allow the bars to cool completely in the pan so the fudge layer sets properly. Once cooled, cut into squares or rectangles and enjoy.

Notes

  • Use fresh old-fashioned oats for ideal chewy texture.
  • Press batter evenly to ensure consistent baking.
  • Remove from oven as soon as edges turn golden to keep centers soft and fudgy.
  • Allow bars to cool fully before slicing for clean cuts and proper texture.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Freeze wrapped bars individually in freezer-safe containers for up to 2 months.
  • To reheat, microwave for 15-20 seconds or warm briefly in a low oven.
