Ingredients

Scale

Base Ingredients

  • 2 cups creamy mashed potatoes, well-seasoned
  • 1/2 cup smoked turkey bacon, cooked and crumbled
  • 3/4 cup shredded plant-based cheese (melty variety like mozzarella or mild cheddar-style)
  • 1/4 cup flour (or gluten-free flour blend for gluten-free option)
  • 2 tbsp natural gelling agent
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp egg replacer or flaxseed mixture (as binder)
  • Olive oil or vegetable oil, for brushing or frying

Optional Variations

  • 12 tbsp finely chopped jalapeños or a pinch of cayenne pepper (for spicy kick)
  • 12 tbsp fresh chopped herbs (parsley, chives, or thyme)
  • Finely diced bell peppers or sautéed mushrooms, as desired

Instructions

  1. Prepare the filling: Cook and mash the potatoes until smooth and creamy. In a bowl, mix mashed potatoes with cooked, crumbled smoked turkey bacon and shredded plant-based cheese. Season with vegetarian Worcestershire sauce (natural), onion powder, garlic powder, salt, and black pepper. Fold in the natural gelling agent and flour to bind the mixture. Finally, add the egg replacer or flaxseed mixture and mix until combined.
  2. Shape the puffs: Allow the mixture to cool enough to handle. Scoop small portions and gently form into bite-sized balls or oval shapes, ensuring they hold together firmly without cracking.
  3. Prepare for baking or frying: For baking, brush each puff lightly with olive oil and place on a lined baking sheet. For frying, heat oil in a pan until shimmering and ready for frying.
  4. Cook until golden and crispy: Bake the puffs in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown. If frying, carefully place puffs in hot oil and cook each side for 3-4 minutes until crisp and golden.
  5. Serve warm: Let the cooked puffs rest briefly before serving hot to enjoy the melty cheese and fluffy potato texture at their best.

Notes

  • Use leftover mashed potatoes for better texture and binding.
  • Do not overmix the ingredients to keep the texture light and fluffy.
  • Chill the mixture for 20 minutes before shaping for easier handling and better structure.
  • Test cook a single puff first to adjust seasoning and ensure proper texture.
  • Brush oil evenly on puffs before baking to achieve a golden, non-greasy finish.
