Scale

Dough Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup plant-based milk, lukewarm
  • 1/4 cup brown sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon (natural)
  • 1/4 cup unsalted butter (plant-based), softened
  • 1/4 cup maple syrup (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)

Filling Ingredients

  • 3 tablespoons unsalted butter (plant-based), melted
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon (natural)

Maple Glaze

  • 1/4 cup maple syrup (natural)
  • 1/2 teaspoon natural gelling agent

Optional Variations

  • 1/3 cup chopped pecans or walnuts
  • 1/2 teaspoon cardamom or nutmeg (natural)
  • 1/3 cup diced apples or dried cranberries
  • 1/3 cup mini dark or plant-based chocolate chips
  • 1/2 cup powdered sugar (natural) with a few drops vanilla extract (natural) as glaze alternative

Instructions

  1. Prepare the Dough: Warm the plant-based milk until lukewarm. Dissolve the active dry yeast and a pinch of brown sugar in the milk and let it activate for about 10 minutes until bubbly. In a large bowl, combine the flour, salt, cinnamon, and remaining brown sugar. Add the softened plant-based butter, maple syrup, vegetarian Worcestershire sauce, and the yeast mixture. Mix and knead until a smooth, elastic dough forms that springs back when touched.
  2. First Rise: Cover the dough with a clean towel and place it in a warm spot. Let it rise until doubled in size, approximately 1 to 1.5 hours. This rise is essential for a tender, airy crumb.
  3. Shape the Rolls: Gently punch down the risen dough and roll it out into a rectangle on a lightly floured surface. Brush the surface evenly with melted plant-based butter, then sprinkle generously with the mixture of brown sugar and cinnamon. Add any optional filling ingredients if desired. Roll the dough tightly from one long edge into a log. Slice the log into even rolls.
  4. Second Rise: Arrange the sliced rolls in a greased baking pan. Cover again and allow the rolls to rise in a warm place for 30 to 45 minutes until nicely puffed.
  5. Bake and Glaze: Preheat the oven to 350°F (175°C). Bake the rolls for 25 to 30 minutes or until golden brown. While still warm, brush the tops with maple syrup mixed with a natural gelling agent to create a shiny glaze that locks in moisture and adds a delicious touch.

Notes

  • Ensure the plant-based milk is lukewarm to properly activate the yeast without killing it.
  • Knead the dough well to develop elasticity for the best texture.
  • Keep the dough covered and away from drafts to ensure consistent rising.
  • Use fresh active dry yeast for reliable fluffy results.
  • Apply the maple glaze while the rolls are warm for optimal shine and flavor absorption.
