Instructions

  1. Prepare the chicken: Slice chicken breasts into bite-sized pieces. Heat olive oil in a large skillet over medium heat. Add the chicken, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes. Remove the chicken from skillet and set aside to keep warm.
  2. Sauté the garlic and combine flavors: In the same skillet, add minced garlic and sauté on medium heat until fragrant, about 1-2 minutes, taking care not to burn it. Stir in fresh lemon juice, vegetarian Worcestershire sauce (natural), and grape juice. Mix well to combine and develop the sauce’s flavor.
  3. Cook the pasta: Meanwhile, cook the pasta in boiling salted water according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
  4. Combine and finish the dish: Return the cooked chicken to the skillet. Add the cooked pasta, plant-based cheese (plant-based), and fresh parsley. Use reserved pasta water as needed to loosen the sauce and stir until everything is evenly coated and creamy. Adjust seasoning with salt and pepper to taste.
