Instructions

  1. Prepare Ingredients: Start by zesting the lemons carefully, avoiding the bitter white pith. Then juice the lemons until you have about 1/3 cup of fresh lemon juice. Beat your egg yolks lightly and have your plant-based butter and plant-based milk ready to go.
  2. Mix the Base: In a medium heatproof bowl, combine the lemon juice, zest, and sugar (natural). Whisk in the egg yolks until the mixture is smooth and slightly thickened. This creates the flavorful base for your Lemon Curd.
  3. Heat Gently while Stirring: Place the bowl over simmering water, making sure the bottom doesn’t touch the water. Stir continuously to prevent the eggs from scrambling. Slowly add the plant-based butter and plant-based milk, allowing them to melt into the mixture creating a silky texture.
  4. Add Natural Gelling Agent: Sprinkle in the natural gelling agent a little at a time while stirring continuously. This will help the Lemon Curd thicken to the desired consistency as it cools.
