Instructions

  1. Prepare the dough: Begin by mixing the all-purpose flour with sugar and a pinch of salt in a large bowl. Cut the plant-based butter into small cubes and work it into the flour with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Beat the eggs with vanilla extract and add them gradually to bring the dough together. Wrap it in plastic and refrigerate for 30 minutes for easier handling.
  2. Roll and cut the dough: On a lightly floured surface, roll out the chilled dough to a 1/4-inch thickness. Using a round cookie cutter or glass, cut out circles about 3 inches in diameter. Transfer the dough rounds to a baking sheet lined with parchment paper, spacing them evenly.
  3. Add the filling: Place a teaspoon of your chosen fruit preserves or fresh fruit mixture into the center of each dough circle. Make sure not to overfill, so the edges seal well during baking. The natural gelling agent in the filling will help keep it nicely contained.
  4. Fold and shape the cookies: Gently fold the dough circles over the filling forming a half-moon or a pinched circle shape by bringing the edges together. Press the edges slightly to seal and create that classic Kolachy look. You can also pinch the dough with a fork for decorative edges.
