Description

Instant Pot Egg Bites offer a quick and satisfying breakfast solution combining savory smoked turkey bacon and creamy plant-based cheese. These protein-packed, fluffy bites are easy to prepare, customizable, and perfect for meal prep or on-the-go mornings.

Egg Mixture

  • 6 large eggs

  • 1 teaspoon vegetarian Worcestershire sauce (natural)

  • 1/2 cup plant-based cheese, shredded
  • 1/2 cup fresh spinach or kale, roughly chopped
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Ingredients: Chop the smoked turkey bacon into small pieces and lightly sauté it in a non-stick pan until flavorful. Roughly chop the greens and shred the plant-based cheese.
  2. Whisk the Egg Mixture: In a bowl, whisk together the eggs, milk of choice, vegetarian Worcestershire sauce (natural), salt, and pepper until combined and slightly frothy, forming a custard base.
  3. Combine All Ingredients: Gently fold the sautéed turkey bacon, chopped greens, shredded plant-based cheese, and natural gelling agent into the egg mixture evenly.
  4. Fill the Silicone Molds: Pour the mixture into silicone egg bite molds or small ramekins, filling each mold about three-quarters full to prevent overflow and allow even cooking.
  5. Pressure Cook in the Instant Pot: Add 1 cup of water to the Instant Pot, place a trivet inside, and carefully set the filled molds on the trivet. Seal the lid and cook on high pressure for 9 minutes, then let the pressure release naturally for 10 minutes before opening the lid.
  6. Cool and Serve: Allow the egg bites to cool slightly to fully set, then remove from molds. Serve warm or store for later consumption.
