Instructions
- Prepare the Ingredients: Chop the smoked turkey bacon into small pieces and lightly sauté it in a non-stick pan until flavorful. Roughly chop the greens and shred the plant-based cheese.
- Whisk the Egg Mixture: In a bowl, whisk together the eggs, milk of choice, vegetarian Worcestershire sauce (natural), salt, and pepper until combined and slightly frothy, forming a custard base.
- Combine All Ingredients: Gently fold the sautéed turkey bacon, chopped greens, shredded plant-based cheese, and natural gelling agent into the egg mixture evenly.
- Fill the Silicone Molds: Pour the mixture into silicone egg bite molds or small ramekins, filling each mold about three-quarters full to prevent overflow and allow even cooking.
- Pressure Cook in the Instant Pot: Add 1 cup of water to the Instant Pot, place a trivet inside, and carefully set the filled molds on the trivet. Seal the lid and cook on high pressure for 9 minutes, then let the pressure release naturally for 10 minutes before opening the lid.
- Cool and Serve: Allow the egg bites to cool slightly to fully set, then remove from molds. Serve warm or store for later consumption.
