  • 1 lb baby potatoes or fingerlings, halved or quartered
  • 2 tbsp olive oil
  • Salt, to taste

Garlic Butter (Plant-Based) Sauce

  • 3 tbsp plant-based butter (plant-based)
  • 3 cloves fresh garlic, minced
  • 1 tbsp apple cider vinegar (natural)
  • Fresh parsley or thyme, chopped, for garnish

Instructions

  1. Prepare the Potatoes: Wash and cut the baby potatoes into halves or quarters for even cooking. Toss them with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast at 425°F (220°C) for about 25 minutes until the potatoes are golden brown and crispy on the outside but tender inside.
  2. Season the Steak Bites: While the potatoes roast, pat the steak bites dry with paper towels to ensure a good sear. Season them generously with salt and freshly ground black pepper, coating each piece evenly.
  3. Sear the Steak Bites: Heat a skillet over medium-high heat and add a bit of olive oil. When hot, add the steak bites in a single layer without overcrowding. Sear each side for 2-3 minutes until a rich brown crust forms and the interior remains juicy. Remove from the pan and set aside.
