Ingredients

Scale

Main Ingredients

  • 2 cups fresh corn kernels
  • 6 slices smoked turkey bacon, crumbled
  • 2 tablespoons plant-based butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups plant-based milk
  • 1 cup shredded (plant-based) cheese
  • 1 small onion, finely chopped
  • 1/2 teaspoon garlic powder (natural)
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Turkey Bacon and Vegetables: Crisp the smoked turkey bacon in a skillet over medium heat until nicely browned. Remove and set aside. In the same skillet, sauté the finely chopped onion until translucent to build the flavor base.
  2. Make the Creamy Sauce: Melt the plant-based butter in a saucepan over medium heat. Whisk in the flour to create a smooth roux and cook for about 2 minutes to eliminate the raw flour taste. Gradually pour in the plant-based milk, stirring constantly until the mixture thickens into a creamy sauce. Season with garlic powder (natural) and vegetarian Worcestershire sauce (natural) to enhance savory notes.
  3. Combine Corn and Sauce: Stir the fresh corn kernels into the creamy sauce along with the natural gelling agent to achieve a luscious yet firm consistency. Add the sautéed onions and crumbled smoked turkey bacon, then fold in the shredded (plant-based) cheese until fully melted and smooth.
  4. Bake Until Golden: Transfer the mixture to a baking dish and smooth the top. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes, until bubbly and golden on top, allowing the flavors to meld beautifully.
  5. Garnish and Serve: Remove from the oven and sprinkle with chopped fresh parsley for a pop of color and freshness. Serve warm to enjoy the comforting flavors.

Notes

  • Use fresh corn for the best sweetness and texture.
  • Cook the flour and butter roux thoroughly to avoid lumps and raw taste.
  • Allow the dish to bake fully to develop a golden crust and set the texture.
  • Adjust the amount of (plant-based) cheese based on desired richness and cheesiness.
  • Let the scalloped corn rest for a few minutes before serving to make slicing easier and enhance flavors.
