For the Chicken and Rice

  • 2 large chicken breasts, tender and juicy
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth or vegetable broth
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried herbs (optional, such as oregano or thyme)

For the Tzatziki (Plant-Based)

  • 1 medium fresh cucumber, grated and excess moisture squeezed out
  • 1 cup plant-based yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice (natural)
  • Pinch of salt
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Chicken and Rice Mix: Rinse the rice under cold water until the water runs clear to remove excess starch. In a large baking dish, combine the rinsed rice, chicken broth or vegetable broth, vegetarian Worcestershire sauce (natural), olive oil, minced garlic, and a pinch of salt. Stir gently to distribute the flavors evenly.
  2. Season the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and dried herbs if using. Place the chicken breasts gently on top of the rice mixture, nestling them in but not submerging them.
  3. Bake the Dish: Cover the baking dish tightly with foil to trap steam. Place it in a preheated oven at 375°F (190°C). Bake for about 45 minutes or until the chicken is fully cooked and the rice has absorbed all the flavorful broth, becoming tender and fluffy.
  4. Make the Tzatziki (Plant-Based): While the chicken and rice bake, grate the fresh cucumber and squeeze out any excess liquid. In a bowl, combine the grated cucumber with plant-based yogurt, chopped dill and mint, minced garlic, lemon juice (natural), a pinch of salt, and natural gelling agent. Mix well until smooth and thickened. Chill in the refrigerator until ready to serve.
  5. Serve Together: Remove the baking dish from the oven and allow it to rest for a few minutes. Plate the chicken breasts and rice, then spoon generous amounts of the chilled plant-based tzatziki over the top or serve it alongside for dipping.
