  • 1/2 tsp natural gelling agent (e.g. pectin or agar)

Garnish

  • 2 tbsp fresh coriander (cilantro), chopped
  • 2 tbsp scallions (green onions), thinly sliced

Instructions

  1. Prepare the Chicken: Cut your chicken into bite-sized pieces and pat dry thoroughly. Toss them evenly in cornstarch or chickpea flour to coat, creating the crispy exterior for frying.
  2. Fry the Chicken: Heat oil in a deep pan over medium heat. Fry the coated chicken pieces for 5-7 minutes or until golden brown and cooked through. Drain the chicken on paper towels to remove excess oil and keep crispiness, then set aside.
  3. Make the Sauce: In a separate pan, sauté garlic paste, ginger paste, and chopped green chilies until fragrant. Add vegetarian Worcestershire sauce, tomato ketchup, soya sauce, and a splash of apple cider vinegar. Simmer gently, stirring occasionally, and add the natural gelling agent to slightly thicken the sauce, adjusting seasoning as needed.
  4. Combine Chicken and Sauce: Toss the fried chicken pieces into the sauce ensuring every piece is coated thoroughly. Cook together for an additional 2-3 minutes to allow flavors to meld beautifully.
  5. Garnish and Serve: Finish by sprinkling sliced scallions and chopped fresh coriander over the dish. Serve immediately to maintain the perfect texture and freshness.
