Ingredients

Scale

Main Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm water (about 110°F)
  • 1/2 cup plant-based milk
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons plant-based butter (melted, natural)
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon natural gelling agent

Optional Variations

  • Fresh or dried rosemary or thyme for herbed rolls
  • Minced garlic and parsley
  • Substitute half flour with whole wheat flour
  • Plant-based honey alternative in place of sugar
  • Shredded plant-based cheese

Instructions

  1. Activate the Yeast: Combine warm water, sugar, and active dry yeast in a bowl. Stir gently and let sit for 5 to 10 minutes until foamy and bubbly.
  2. Mix Wet Ingredients: In a separate bowl, whisk together plant-based milk, apple cider vinegar, vegetarian Worcestershire sauce (natural), vegetable oil, and melted plant-based butter (natural).
  3. Combine Dry and Wet Ingredients: Add the activated yeast mixture to the wet ingredients. Slowly incorporate the flour, salt, and natural gelling agent, stirring until a sticky dough forms that pulls away from the sides of the bowl.
  4. Knead the Dough: Transfer the dough to a lightly floured surface and knead for 8-10 minutes until elastic and smooth.
  5. First Rise: Place dough in a greased bowl, cover with a damp cloth or plastic wrap, and let rise in a warm spot for about 1 hour until doubled in size.
  6. Shape the Rolls: Punch down the dough to release air bubbles. Divide into 12 equal pieces, shape each into smooth balls, and place close together in a greased baking dish.
  7. Second Rise: Cover and let proof for 30-40 minutes until puffy and nearly doubled.
  8. Bake: Preheat oven to 375°F (190°C). Brush tops with melted plant-based butter (natural) and bake for 20-25 minutes until golden brown.

Notes

  • Use warm water around 110°F to activate yeast without killing it.
  • Do not add excess flour during kneading to keep rolls fluffy.
  • Allow dough to fully rise to ensure light texture.
  • Brush rolls immediately after baking with melted plant-based butter for softness and shine.
  • Place rolls slightly apart in baking dish for even baking.
  • Store cooled rolls in an airtight container at room temperature for up to 2 days.
  • Freeze wrapped rolls up to 3 months; thaw before reheating.
  • Reheat rolls at 350°F (175°C) for 10-15 minutes or microwave wrapped in a damp towel for 20 seconds.
