Egg and Dressing Mixture

Main Salad

  • 2 cups short pasta (rotini or penne), cooked al dente
  • 4 slices smoked turkey bacon, chopped
  • 1/2 cup plant-based cheese, diced
  • 1/2 cup celery, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Boil and Prepare Pasta and Eggs: Cook the pasta according to package instructions until al dente. Hard boil the eggs until the yolks are firm, then cool both pasta and eggs in cold water to stop cooking.
  2. Cook Smoked Turkey Bacon: Chop smoked turkey bacon into bite-sized pieces and cook in a skillet over medium heat until crisp and fragrant. Drain on paper towels and set aside.
  3. Mix Deviled Egg Filling: Peel the boiled eggs and separate the yolks into a bowl. Mash yolks with natural mayonnaise, natural yellow mustard, apple cider vinegar, salt, and black pepper until creamy and smooth.
  4. Combine Ingredients: Chop the egg whites into small pieces. In a large mixing bowl, add the chopped egg whites, cooked pasta, smoked turkey bacon, diced celery, green onions, and plant-based cheese. Pour the deviled yolk mixture over and gently fold everything together to combine evenly.
