Instructions

  1. Prepare the Smoked Turkey Bacon and Aromatics: Cook the smoked turkey bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot. Add chopped onions, minced garlic, and jalapeños to the pot, sautéing until softened and fragrant.
  2. Cook the Chicken: Lightly season chicken breasts with salt, cumin, and oregano. Add to the pot with aromatics and brown on both sides without fully cooking through.
  3. Add the Broth and Beans: Pour in chicken broth, grape juice (natural), and vegetarian Worcestershire sauce (natural). Stir in cannellini beans and bring to a gentle simmer.
  4. Simmer and Shred: Cover and simmer on low heat for about 20 minutes, or until chicken is cooked through and tender. Remove chicken breasts, shred with two forks, and return shredded chicken to the pot.
  5. Stir in Creaminess and Natural Gelling Agent: Add plant-based cheese and natural gelling agent to thicken the chili and create a creamy texture. Stir until cheese melts and the chili is smooth and luscious.
