Instructions

  1. Prepare the Tortellini: Cook the plant-based cheese tortellini according to package instructions until al dente. Drain and set aside, reserving about 1/4 cup of the pasta water for the sauce.
  2. Cook the Turkey Bacon: In a large skillet over medium heat, cook the smoked turkey bacon until crispy. Remove the bacon to a plate and chop into bite-sized pieces, leaving the flavorful drippings in the skillet.
  3. Sear the Steak: Season the sirloin steak pieces with salt and freshly ground black pepper. Using the skillet with the turkey bacon drippings, sear the steak over medium-high heat until browned on all sides but still juicy inside, about 2-3 minutes per side. Remove the steak and let it rest for a few minutes before slicing into bite-sized cubes.
  4. Make the Cowboy Butter Sauce: Reduce the heat to low. Add the plant-based butter and minced garlic to the skillet. Once the garlic becomes fragrant, stir in the vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), and reserved pasta water. Stir gently until a silky sauce forms.
  5. Combine Everything: Return the cooked tortellini, seared steak cubes, and chopped turkey bacon to the skillet. Toss everything gently to coat evenly with the cowboy butter sauce. Finish by sprinkling fresh parsley and an extra grind of black pepper before serving.
