Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 cup plant-based milk, warmed
  • 1/4 cup brown sugar (natural)
  • 1/4 cup plant-based butter, softened
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract (natural)

Filling Ingredients

  • 1/4 cup plant-based butter, melted
  • 1/2 cup brown sugar (natural)
  • 2 tbsp ground cinnamon (natural)
  • 1 tsp vegetarian Worcestershire sauce (natural) (optional)
  • 1/4 tsp ground nutmeg (natural)
  • 1/8 tsp ground cardamom (natural) (optional)

Glaze Ingredients

  • 1 cup powdered sugar (natural)
  • 23 tbsp plant-based milk
  • 1/2 tsp vanilla extract (natural)
  • 1/4 tsp natural gelling agent

Instructions

  1. Prepare the Dough: Warm the plant-based milk until pleasantly warm to the touch. Dissolve the active dry yeast in the warm milk with 1 tablespoon of brown sugar and wait until foamy. In a large bowl, combine the flour, remaining brown sugar, softened plant-based butter, apple cider vinegar, and vanilla extract. Add in the yeast mixture and mix until a soft dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic.
  2. Let the Dough Rise: Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
  3. Prepare the Filling: While the dough rises, mix the melted plant-based butter with brown sugar, ground cinnamon, nutmeg, and optional ground cardamom. Add vegetarian Worcestershire sauce if desired to deepen the flavor. Stir until well combined.
  4. Roll Out and Fill: Once the dough has doubled, roll it out on a floured surface into a 12 by 18 inch rectangle. Spread the cinnamon sugar filling evenly over the dough, leaving a small border on edges. Carefully roll the dough tightly from the longer edge to create a log.
  5. Slice and Arrange: Cut the rolled dough into 12 equal pieces. Arrange them spaced apart in a greased baking tray or round pan. Cover and let rise again for 30 to 45 minutes.
  6. Bake to Perfection: Preheat the oven to 180°C (350°F). Bake the buns for 20 to 25 minutes until golden brown and cooked through. Monitor to avoid over-browning.
  7. Glaze Your Cinnamon Buns: Mix the powdered sugar with plant-based milk, vanilla extract, and natural gelling agent until smooth. Drizzle generously over warm buns to finish with a shiny, sweet glaze.

Notes

  • Use warm liquids to activate the yeast effectively and ensure good dough rise.
  • Kneading thoroughly develops gluten for a soft, airy texture.
  • Allow the dough to fully double in size for best fluffiness.
  • Roll the dough tightly yet gently to create neat cinnamon swirls without compressing the dough.
  • Apply the glaze while the buns are warm so it seeps in perfectly, adding moisture and shine.
