Scale
Vegetables
- 2 cups broccoli florets (fresh or frozen)
- 2 cups cauliflower florets (fresh or frozen)
Cheese Sauce
- 1 cup plant-based cheese, shredded
- 1 cup plant-based milk
- 1 tablespoon olive oil
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- 2 tablespoons grape juice (natural)
- 1 teaspoon natural gelling agent
- 1/2 teaspoon onion powder (natural)
- 1/2 teaspoon garlic powder (natural)
- Salt and pepper to taste
Smoky Protein
- 4 slices smoky plant-based bacon, diced
Instructions
- Prepare the Vegetables: Wash and steam the broccoli and cauliflower florets until just tender but still slightly crunchy to retain their vitamins and texture.
- Cook the Smoky Plant-Based Bacon: In a skillet, sauté the smoky plant-based bacon pieces until crispy and browned to release flavorful fat.
- Make the Cheese Sauce: In the same skillet, add olive oil and whisk in plant-based milk, vegetarian Worcestershire sauce (natural), grape juice (natural), onion and garlic powder (natural), and natural gelling agent. Stir continuously over medium heat until the sauce thickens and becomes glossy. Fold in shredded plant-based cheese until melted and smooth.
- Combine and Assemble: Mix the steamed vegetables and crispy smoky plant-based bacon into the cheese sauce until well coated. Transfer the mixture into a greased casserole dish and spread evenly.
- Bake to Perfection: Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes until the top is golden and bubbly. Allow to cool slightly before serving to set the texture.
Notes
- Do not overcook the broccoli and cauliflower to maintain a pleasant texture and avoid mushiness.
- Use high-quality plant-based cheese for best melting and creaminess.
- Gently fold in vegetables and smoky plant-based bacon to keep nice chunks intact.
- Preheat the oven to ensure even baking and a golden crust.
- Check that the casserole is hot in the center and the sauce is fully thickened before serving.
