Instructions

  1. Caramelize the Onions: Heat 2 tablespoons of olive oil in a frying pan over medium-low heat. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for up to 30 minutes until the onions turn a rich golden brown and develop a sweet, soft texture.
  2. Cook the Smoky Turkey Bacon: In a separate pan, cook the turkey bacon slices until crisp. Remove and place on paper towels to drain excess oil. Once cooled, chop into bite-sized pieces.
  3. Prepare the Egg Mixture: Crack the eggs into a mixing bowl. Add salt, pepper, and vegetarian Worcestershire sauce (natural). Whisk until fluffy and combined. Gently fold in the plant-based cheese and fresh herbs.
  4. Combine and Cook: Reduce heat to medium. Add the caramelized onions and chopped turkey bacon into the egg mixture, folding gently. Pour the mixture evenly back into the pan. Let it cook undisturbed until the edges are set and the center is slightly runny.
