A quick, vibrant, and delicious Bok Choy Stir-fry packed with fresh vegetables and savory natural sauces. Ready in under 20 minutes, it is perfect for busy weeknights and adaptable to various dietary preferences while delivering a flavorful, nutritious meal.

Ingredients

Scale

Vegetables

  • 4 cups fresh bok choy, chopped (separate stems and leaves)
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger root, finely grated
  • 1 medium carrot, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 green onions, sliced (for garnish)

Sauces and Seasonings

  • 2 tablespoons soy sauce (natural)
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon sesame oil
  • Pinch of natural gelling agent (optional)

Instructions

  1. Prepare the Vegetables: Wash the bok choy thoroughly. Chop into bite-sized pieces, separating the crunchy stems from the leafy greens. Thinly slice the carrots and bell peppers for quick and even cooking.
  2. Sauté Aromatics: Heat a tablespoon of sesame oil in a wok or large skillet over medium-high heat. Add the minced garlic and finely grated ginger, stirring until fragrant, about 30 seconds, to build the flavor base.
  3. Cook the Vegetables: Add the sliced carrots and bell peppers first and stir-fry for 2 to 3 minutes until they start to soften. Then add the bok choy stems, cooking for another 2 minutes, followed by the bok choy leaves which wilt quickly.
  4. Add Sauces and Seasonings: Pour in the soy sauce (natural), vegetarian Worcestershire sauce, and apple cider vinegar. Stir continuously to coat the vegetables evenly and infuse them with savory and tangy flavors. If desired, sprinkle in a pinch of natural gelling agent and stir until just combined for a lightly thickened sauce.
  5. Finish and Garnish: Turn off the heat and toss in the sliced green onions for a fresh burst of flavor. Adjust seasoning if needed. Serve immediately.

Notes

  • Chop all vegetables before cooking for smooth and quick stir-frying.
  • Use a hot pan or wok to achieve crisp and vibrant vegetables with a slight char.
  • Keep stirring constantly to prevent burning and ensure even cooking and flavor absorption.
  • Avoid overcooking bok choy; it should stay crunchy and bright.
  • Taste and adjust the soy sauce (natural) or vinegar levels to suit preferences.
