Assembly

  • 8 soft tortillas (corn or flour)
  • 1 cup plant-based cheese (plant-based), shredded

Instructions

  1. Prepare the filling: In a skillet over medium heat, cook the ground beef, breaking it apart until browned. Add the chopped onion and minced garlic, cooking until soft and fragrant. Stir in chopped tomatoes, vegetarian Worcestershire sauce (natural), chili powder, cumin, and apple cider vinegar (natural). Let the mixture simmer until the flavors meld and the filling thickens slightly.
  2. Assemble the enchiladas: Warm the tortillas until pliable. Spoon a generous amount of beef filling into the center of each tortilla. Sprinkle plant-based cheese (plant-based) inside before rolling each tortilla tightly. Place the rolled enchiladas seam-side down in a baking dish.
  3. Make the enchilada sauce: In a saucepan, combine tomato puree, chili powder, cumin, natural gelling agent, and apple cider vinegar (natural). Heat gently while stirring until thickened and glossy. Pour the sauce evenly over the assembled enchiladas in the baking dish.
