Ingredients
Scale
Chicken and Skewers
- 1.5 lbs boneless chicken thighs, cut into bite-sized pieces
- 8–10 wooden or metal skewers
Bang Bang Sauce
- 1/2 cup plant-based mayonnaise
- 2 tbsp sriracha (natural)
- 1 tbsp honey (natural)
- 1 tbsp apple cider vinegar (natural)
- 1 tsp garlic powder (natural)
- 1 tbsp vegetarian Worcestershire sauce
- 1 tbsp fresh lime juice
- 1/2 tsp natural gelling agent
Garnish
- 2 tbsp chopped green onions
- Toasted sesame seeds (optional)
Instructions
- Prepare the chicken: Start by cutting the boneless chicken thighs into even bite-sized pieces to ensure they cook evenly and absorb the marinade thoroughly.
- Make the Bang Bang sauce: In a mixing bowl, combine plant-based mayonnaise, sriracha (natural), honey (natural), apple cider vinegar (natural), garlic powder (natural), vegetarian Worcestershire sauce, fresh lime juice, and natural gelling agent. Whisk until smooth with a thick, spreadable texture.
- Marinate the chicken: Pour half of the Bang Bang sauce over the chicken pieces, making sure each piece is well coated. Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Thread the skewers: Carefully thread the marinated chicken pieces onto wooden or metal skewers, packing them closely but without crowding for even grilling.
- Grill the skewers: Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 4 to 5 minutes on each side until cooked through and slightly charred at the edges.
- Finish with sauce and garnish: Remove the skewers from the grill and brush or drizzle with the remaining Bang Bang sauce. Sprinkle chopped green onions and toasted sesame seeds on top for a fresh, crunchy finish.
Notes
- Cut chicken into uniform pieces for consistent cooking and juiciness.
- Marinate up to 2 hours for deeper flavor.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Grill on high heat to quickly seal in juices.
- Reserve some Bang Bang sauce for dipping or drizzling when serving.
