Description

Apple Pie is a timeless classic dessert featuring a flaky, plant-based crust filled with a warm, spiced apple filling. This vegan and gluten-free recipe uses simple, wholesome ingredients including a natural gelling agent to perfect the texture, resulting in tender, flavorful slices that are perfect for any occasion.

Ingredients

Scale

Crust

  • 1 1/4 cups all-purpose gluten-free flour blend
  • 1/4 teaspoon salt
  • 1/2 cup plant-based butter, cold and cubed
  • 34 tablespoons cold water

Filling

  • 6 cups fresh apples, peeled and thinly sliced (mix of tart and sweet varieties)
  • 1/2 cup brown sugar (natural)
  • 1 teaspoon cinnamon (natural)
  • 1/4 teaspoon nutmeg (natural)
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon natural gelling agent

For Assembly

  • 1/4 cup plant-based milk

Instructions

  1. Prepare the Crust: In a large bowl, mix gluten-free all-purpose flour blend and salt. Cut in the cold plant-based butter until the mixture resembles coarse crumbs. Gradually add cold water, 1 tablespoon at a time, mixing gently until the dough just comes together. Shape into a disk, wrap it tightly in plastic wrap, and chill in the refrigerator for at least 1 hour to firm up for easier rolling.
  2. Make the Filling: Peel and thinly slice the apples. In a medium saucepan over medium heat, combine sliced apples with brown sugar (natural), cinnamon (natural), nutmeg (natural), lemon juice, apple cider vinegar, vegetarian Worcestershire sauce (natural), and natural gelling agent. Cook while stirring occasionally until apples soften and the mixture thickens slightly, about 8-10 minutes. Remove from heat and allow to cool.
  3. Assemble the Pie: Preheat the oven to 375°F (190°C). Roll out half of the chilled dough on a lightly floured surface into a circle slightly larger than your pie dish. Carefully transfer the dough to the pie dish and press gently to fit. Pour the spiced apple filling evenly over the crust. Roll out the remaining dough to cover the top. Seal edges securely, trim any excess dough, and cut small slits in the top crust to allow steam to escape. Brush the surface with plant-based milk to promote a golden crust.
  4. Bake to Perfection: Place the assembled pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling bubbles through the slits. Remove from oven and let cool completely before slicing to allow the filling to set properly.

Notes

  • Mix tart and sweet apple varieties for a balanced filling.
  • Keep dough and plant-based butter cold to ensure a flaky crust.
  • Avoid overfilling the pie to prevent spillover while baking.
  • Use a natural gelling agent to thicken filling without changing flavor.
  • Allow the pie to cool before serving for clean slices.
