Description

This Easy Yaki Udon Noodle recipe offers a quick, flavorful weeknight meal featuring tender udon noodles, fresh vegetables, and savory smoked turkey bacon. Perfectly balanced with a smoky, umami-rich sauce and aromatic garlic and ginger, it is customizable, comforting, and ready in under 30 minutes.

Ingredients

Scale

Noodles and Protein

  • 200g thick udon noodles
  • 100g smoked turkey bacon, sliced into thin strips

Vegetables

  • 1/2 cup bell peppers, sliced
  • 1/2 cup carrots, julienned
  • 3 green onions, chopped (separate white and green parts)

Sauce and Aromatics

  • 2 tablespoons soy sauce (natural)
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced (natural)
  • 1 teaspoon ginger, grated (natural)
  • 1/2 cup water mixed with natural gelling agent

Instructions

  1. Prepare Your Ingredients: Chop all vegetables into bite-sized pieces and slice smoked turkey bacon into thin strips. Rinse udon noodles under warm water if using pre-packaged ones to loosen them.
  2. Cook the Turkey Bacon: Heat a large pan or wok over medium heat. Add the turkey bacon strips and cook until browned and crispy on the edges. Remove bacon and set aside, leaving some fat in the pan.
  3. Sauté Vegetables and Aromatics: Add a splash of sesame oil to the same pan. Toss in minced garlic and grated ginger, cooking until fragrant. Add fresh vegetables and stir-fry for 4 to 5 minutes until tender-crisp and vibrant.
  4. Add Udon Noodles and Sauce: Return cooked turkey bacon and udon noodles to the pan. Pour in soy sauce (natural), vegetarian Worcestershire sauce, apple cider vinegar, and water mixed with natural gelling agent to help sauce cling.
  5. Combine and Cook Through: Stir everything thoroughly, ensuring noodles are evenly coated. Cook for 2 to 3 minutes until heated through and sauce thickens to glaze ingredients.

Notes

  • Use fresh or refrigerated udon noodles for best texture; soak dried noodles if needed.
  • Do not overcrowd pan; cook in batches to keep vegetables crisp and bacon browned.
  • Maintain medium-high heat but stir constantly once sauce is added to avoid burning.
  • Taste and adjust seasoning with extra soy sauce or apple cider vinegar to suit preference.
  • Garnish with chopped green onions or toasted sesame seeds before serving for freshness.
