Instructions

  1. Prepare the Yeast Mixture: Dissolve the active dry yeast and 1 teaspoon of granulated sugar in warm water. Let it sit for 5 to 10 minutes until frothy, indicating the yeast is activated.
  2. Mix the Dough: In a large bowl, combine all-purpose flour, remaining sugar, and salt. Add ube paste, softened plant-based butter, plant-based milk, natural vanilla extract, natural gelling agent, and the activated yeast mixture. Stir until a sticky dough forms.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. If sticky, sprinkle more flour as needed while kneading.
  4. First Rise: Place dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 2 hours or until doubled in size.
  5. Shape the Rolls: Punch down the risen dough to release air. Divide into equal portions and shape each into smooth balls or ovals. Place on a parchment-lined baking tray.
  6. Second Rise: Let the shaped rolls rest for 30 to 45 minutes until puffed. Meanwhile, preheat the oven to 350°F (175°C).
  7. Bake: Bake rolls for 18 to 22 minutes until golden and hollow sounding when tapped. Cool slightly before serving.
