Ingredients

Scale

Pasta and Meats

  • 8 oz spaghetti pasta
  • 6 slices smoked turkey bacon
  • 1 cup smoked turkey slices, diced

Vegetables and Aromatics

  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced

Sauce

  • 1 cup plant-based cream or milk alternative
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 1 cup plant-based cheese, shredded
  • 1 tsp natural gelling agent

Seasonings and Garnish

  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Pasta and Meats: Boil the spaghetti pasta until just al dente, then drain and set aside. Meanwhile, cook the smoked turkey bacon in a skillet over medium heat until crisp; remove and chop into bite-sized pieces. Dice the smoked turkey slices, then lightly sauté them with the mushrooms, onion, and garlic until tender and fragrant.
  2. Make the Creamy Sauce: In a separate saucepan, combine the plant-based cream or milk alternative, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), and plant-based cheese. Stir gently over low heat until the cheese melts completely and the mixture thickens slightly thanks to the natural gelling agent.
  3. Combine Everything: In a large mixing bowl or directly in a baking dish, toss the cooked pasta with the turkey meat mixture and creamy sauce. Stir gently to coat everything evenly. Season with salt, pepper, and fresh parsley to taste.
  4. Bake the Casserole: Transfer the combined ingredients to a casserole dish. Sprinkle extra plant-based cheese on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, until the top is golden and bubbly with a delicious aroma.

Notes

  • Do not overcook the pasta; keep it slightly firm to avoid mushiness after baking.
  • Use freshly chopped herbs to brighten up the casserole and enhance flavor complexity.
  • Let the casserole rest briefly before serving to help it set for easier slicing.
  • Choose quality plant-based cheese for the best melt and creaminess in your sauce.
  • Customize your seasoning by adjusting salt, pepper, and vegetarian Worcestershire sauce (natural) for perfect flavor balance.
