Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon natural gelling agent
  • 1/4 cup natural cocoa powder

Wet Ingredients

  • 1/2 cup plant-based butter, softened
  • 3/4 cup sugar
  • 1/4 cup almond milk (plant-based)
  • 1 teaspoon natural vanilla extract
  • 1 tablespoon vegetarian Worcestershire sauce (optional)

Instructions

  1. Prepare the Dough: Begin by creaming the plant-based butter and sugar together until light and fluffy. Gradually add the almond milk (plant-based) and natural vanilla extract while mixing continuously. In a separate bowl, sift together the all-purpose flour, baking powder, salt, and natural gelling agent. Slowly combine the dry ingredients with the wet mixture until a soft dough forms.
  2. Divide and Flavor the Dough: Split the dough evenly into two separate bowls. In one bowl, mix in the natural cocoa powder and a splash of vegetarian Worcestershire sauce for the chocolate swirl dough. Leave the other bowl as the vanilla-flavored dough. This contrast will create the signature swirl pattern and balanced taste.
  3. Create the Swirls: On a large sheet of parchment paper, place alternating spoonfuls of vanilla and chocolate dough side by side. Gently roll and twist the dough into a log shape, ensuring the colors form an even and striking swirl throughout the log. Chill the log in the refrigerator for about 30 minutes to firm it up for easier slicing.
  4. Slice and Bake: Preheat the oven to 350°F (175°C). Remove the chilled dough log and slice it into uniform rounds about 1/4 inch thick. Arrange the cookie slices evenly spaced on a baking tray lined with parchment paper. Bake for 12-15 minutes, or until the edges are golden and the centers are just set. Allow the cookies to cool before serving.

Notes

  • Chill the dough thoroughly to ensure defined swirls and easier slicing.
  • Use room temperature ingredients for better mixing and texture.
  • Avoid overmixing the dough to keep cookies tender and soft.
  • Slice dough evenly for uniform baking and consistent texture.
  • Experiment with different rolling techniques to create unique swirl patterns.
