Instructions

  1. Prepare the Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking while they cool.
  2. Sauté the Spinach: In a large pan, heat a bit of olive oil and lightly sauté fresh spinach just until wilted. Season with a pinch of salt and set aside to cool.
  3. Mix the Filling: In a bowl, combine the plant-based creamy cheese, ricotta-style plant-based cheese, minced garlic, chopped fresh parsley and basil, sautéed spinach, and a splash of vegetarian Worcestershire sauce (natural). Stir until all ingredients are thoroughly blended. Optionally, fold in chopped smoked turkey bacon or other desired variations.
  4. Assemble the Roll Ups: Spread a generous layer of the filling mixture evenly across each noodle. Roll the noodles carefully but firmly to create individual cylinders, placing each seam side down in a baking dish prepped with a layer of tomato sauce (natural) or creamy cashew sauce (natural).
  5. Bake to Perfection: Pour additional tomato sauce (natural) or creamy cashew sauce over the roll ups, sprinkle with shredded plant-based cheese, and bake at 375°F (190°C) for 25 to 30 minutes until bubbly and golden on top.
