Description

Garlic Bread with Roasted Garlic and Parmesan (plant-based) is a warm, crispy, and flavorful side that features mellow roasted garlic blended with sharp, creamy Parmesan (plant-based) atop golden toasted bread. This easy-to-make recipe delivers a perfect burst of flavor and crunch, ideal for pairing with soups, salads, pasta, or enjoying as a savory snack.

Ingredients

Scale

Bread and Base

  • 1 good quality crusty baguette or Italian bread loaf
  • Olive oil (natural), for brushing and roasting

Roasted Garlic Mixture

  • 12 whole garlic bulbs, roasted
  • Salt, a pinch (natural gelling agent)
  • Freshly ground black pepper, to taste
  • Parmesan (plant-based), about ½ cup grated
  • Fresh parsley, finely chopped, 2 tablespoons

Optional Variations

  • Crushed red pepper flakes, a pinch (for spicy kick)
  • Fresh basil, oregano, or thyme, 1 tablespoon mixed, finely chopped (herb medley)
  • Smoked turkey bacon bits, about 2 tablespoons, crispy
  • Sun-dried tomatoes, chopped, 2 tablespoons
  • Roasted red pepper spread, thin layer as desired

Instructions

  1. Roast the garlic: Preheat oven to 375°F (190°C). Place whole garlic bulbs on a baking sheet, drizzle lightly with olive oil (natural) and roast for 30-40 minutes until golden and soft. Squeeze out the roasted garlic cloves and mash gently with a fork.
  2. Prepare the bread: Slice bread into 1-inch thick pieces or halved lengthwise according to preference. Generously brush each slice with olive oil (natural) ensuring it will toast to a crispy golden texture.
  3. Combine toppings: In a small bowl, mix the mashed roasted garlic with olive oil (natural), a pinch of salt, freshly ground black pepper, and grated Parmesan (plant-based). Stir in the chopped fresh parsley until evenly combined.
  4. Assemble and bake: Spread the garlic and Parmesan mixture evenly over each bread slice. Place the slices on a baking sheet and bake for 10-15 minutes or until the bread is toasted and the cheese melts and bubbles.
  5. Serve warm: Remove from oven and serve immediately for the best combination of crispy bread and creamy garlic-Parmesan topping. Garnish with additional fresh parsley if desired.

Notes

  • Use day-old bread for a better crunchy texture when toasted.
  • Roast garlic ahead of time and refrigerate for up to one week.
  • Apply just enough olive oil (natural) to avoid soggy bread but provide richness.
  • Watch closely while baking to avoid burning and ensure golden melting.
  • Add chopped fresh herbs at the end of baking or just before serving to preserve vibrant taste and color.
