Instructions
- Prepare the Carrot Layer: Peel and juice fresh carrots to yield about 2 cups of juice. In a small pot, combine the carrot juice with honey or agave syrup and natural gelling agent. Warm gently on low heat, stirring frequently until the mixture thickens slightly and the gelling agent is activated. Pour into serving glasses to form the base layer. Chill in the refrigerator for 20 to 30 minutes until it sets into a soft jelly texture.
- Mix the Orange Juice Layer: Freshly squeeze oranges to obtain 2 cups of juice. Stir in apple cider vinegar and add honey or agave syrup if desired for extra sweetness. Mix in the natural gelling agent and gently warm the mixture until dissolved. Allow it to cool slightly, then slowly pour it over the set carrot layer using the back of a spoon to maintain distinct layering. Return glasses to the fridge to set.
