Description

Brown Sugar Pop-Tart Cookies are soft, chewy cookies filled with a sweet plant-based cinnamon and brown sugar filling wrapped in a flaky, buttery plant-based crust. These cookies bring the nostalgic Pop-Tart flavors into a simple, versatile, and delicious treat perfect for breakfast, snacks, dessert, or gifting. The recipe uses simple pantry staples and plant-based ingredients to create a comforting and flavorful cookie everyone can enjoy.

Ingredients

Scale

For the Dough

  • 2 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 cup softened plant-based butter
  • 1/4 teaspoon salt
  • 2 to 3 tablespoons plant-based milk
  • 1 teaspoon pure vanilla extract (natural)

For the Filling

  • 3/4 cup softened plant-based cream cheese
  • 1/2 cup powdered sugar (natural)
  • 1 tablespoon cinnamon (natural)
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the softened plant-based butter with brown sugar and a pinch of salt. Beat until creamy and fluffy. Gradually add plant-based milk, pure vanilla extract (natural), and all-purpose flour. Mix just until a smooth dough forms. Wrap the dough tightly in plastic wrap and chill in the refrigerator for at least one hour to firm up and make rolling easier.
  2. Create the Filling: In a small bowl, mix softened plant-based cream cheese, powdered sugar (natural), cinnamon (natural), and the natural gelling agent until smooth and creamy. This filling will provide a sweet and cozy burst of flavor inside the cookies.
  3. Roll and Assemble: On a lightly floured surface, roll out the chilled dough into a rectangle about 1/8 inch thick. Cut the dough into even squares or rectangles using a knife or cookie cutter. Spoon a small amount of filling onto half of the dough pieces, leaving a small border around the edges. Top each filled piece with a remaining dough piece and gently press the edges together to seal them completely.
  4. Bake the Cookies: Place the assembled cookies on a parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 12 to 15 minutes, or until the edges turn golden brown. Remove from oven and transfer to a wire rack to cool completely before serving.

Notes

  • Chill the dough to ensure easier rolling and clean, professional-looking edges.
  • Do not overfill the cookies to prevent leaks during baking.
  • Use room temperature ingredients to help the dough come together smoothly and improve texture.
  • Seal edges firmly by pressing lightly with a fork or fingers to keep filling inside while baking.
  • Allow cookies to cool completely to help the filling set and enhance the texture.
