Ingredients
Pasta and Vegetables
- Elbow macaroni: 8 oz (about 2 cups)
- Tender broccoli florets: 2 cups
Smoked Turkey Bacon
- Smoked turkey bacon, chopped: 4 slices
- Olive oil: 1 teaspoon
Cheese Sauce
- Plant-based cheese (shredded): 1 cup
- Plant-based milk: 1 1/2 cups
- Vegetarian Worcestershire sauce (natural): 1 tablespoon
- Natural gelling agent: 1 teaspoon
- Garlic powder (natural): 1/2 teaspoon
- Pepper: 1/4 teaspoon
- Salt: 1/4 teaspoon
Instructions
- Prepare the Pasta and Broccoli: Cook the elbow macaroni according to package instructions until al dente. During the last 2 to 3 minutes of cooking, add the broccoli florets to the boiling water to blanch them while maintaining their vibrant color and slight crunch. Drain the pasta and broccoli and set aside.
- Cook the Smoked Turkey Bacon: Heat olive oil in a skillet over medium heat. Add the chopped smoked turkey bacon and sauté until crispy and golden, releasing a smoky aroma. Remove from heat and keep warm.
- Make the Cheese Sauce: Using the same skillet, reduce heat to low and combine plant-based milk, shredded plant-based cheese, vegetarian Worcestershire sauce, garlic powder, natural gelling agent, pepper, and salt. Stir gently while warming until the cheese melts smoothly and the sauce thickens to a creamy consistency.
- Combine Everything: Add the cooked pasta, broccoli, and crispy smoked turkey bacon to the cheese sauce. Gently mix until every macaroni piece is coated and the ingredients are well combined.
- Serve Warm: Transfer the Broccoli Mac and Cheese to bowls or a casserole dish. Garnish with fresh herbs or additional plant-based cheese if desired, and serve immediately.
Notes
- Cook pasta al dente to ensure a firm, satisfying texture that holds up well in the sauce.
- Blanch broccoli briefly to retain its bright green color and crispness.
- Warm the cheese sauce slowly to avoid graininess and keep it smooth and creamy.
- Crispy smoked turkey bacon adds a depth of smoky flavor that enhances the dish.
- Use the natural gelling agent sparingly to thicken the sauce without overwhelming its creaminess.
