- Fresh blackberries, washed and patted dry, 1 cup
- Fresh thyme leaves, about 2 tablespoons

Instructions
- Prep the Phyllo Cups: Preheat the oven to 350°F (175°C). Gently separate the phyllo sheets and cover with a damp towel to prevent drying. Layer two sheets at a time, brushing each lightly with olive oil. Cut the stacked sheets into squares large enough to fit into your mini muffin tin. Press each square gently into the tin to form a cup shape.
