  • Fresh blackberries, washed and patted dry, 1 cup
  • Fresh thyme leaves, about 2 tablespoons
  • Honey (natural), for drizzling, 1-2 teaspoons

Instructions

  1. Prep the Phyllo Cups: Preheat the oven to 350°F (175°C). Gently separate the phyllo sheets and cover with a damp towel to prevent drying. Layer two sheets at a time, brushing each lightly with olive oil. Cut the stacked sheets into squares large enough to fit into your mini muffin tin. Press each square gently into the tin to form a cup shape.
  2. Prepare the Filling: Slice the plant-based brie into small pieces that fit comfortably inside each phyllo cup. Wash and dry the blackberries. Strip fresh thyme leaves from their stems and set aside for topping.
  3. Assemble the Cups: Place a piece of brie at the bottom of each phyllo cup. Add one or two blackberries on top of the brie. Sprinkle a few fresh thyme leaves over the berries. Drizzle a small amount of honey (natural) over each cup for subtle sweetness.
