Ideal for sharing or enjoying solo, they are a delightful plant-based treat bursting with natural flavors.

Ingredients

Scale

Dough

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp yeast (active dry)
  • 1 cup warm plant-based milk (about 110°F)
  • 1 tsp baking powder (natural)
  • 1/4 cup sugar (natural)
  • 1/4 cup plant-based butter, melted
  • 1/2 tsp salt
  • 1 tsp apple cider vinegar

Filling

  • 3 medium fresh apples, peeled and finely diced
  • 2 tsp cinnamon (natural)
  • 1/4 cup brown sugar (natural)
  • 2 tbsp plant-based butter, softened

Sweet Glaze (natural)

  • 1 cup powdered sugar (natural)
  • 2 tbsp plant-based cream cheese (optional)
  • 2 tbsp apple juice
  • 1/2 tsp natural gelling agent dissolved in warm water

Instructions

  1. Prepare the Dough: Warm the plant-based milk to a comfortable temperature. Dissolve the yeast and a pinch of sugar in the milk and let it bloom until foamy, about 5-10 minutes. In a large bowl, whisk together flour, baking powder, salt, and sugar. Add the yeast mixture, melted plant-based butter, and apple cider vinegar. Mix until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 hour.
  2. Prepare the Filling: While the dough rises, peel and finely dice the apples. In a bowl, combine the apples with cinnamon, brown sugar, and softened plant-based butter. Stir until the apples are evenly coated.
  3. Roll and Fill the Dough: Once risen, punch down the dough gently. Roll it out on a floured surface into a 12×15 inch rectangle. Spread the apple cinnamon filling evenly over the dough, covering every inch without spilling over. Roll the dough tightly lengthwise into a log.
  4. Slice and Second Rise: Using a sharp knife or dental floss, cut the rolled dough into 12 even slices. Place each slice in a greased baking dish or muffin pan with space for expansion. Cover with a damp cloth and let them rise again for 30 minutes until puffy.
  5. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown on top. Monitor closely near the end to prevent overbaking or drying out.
  6. Prepare the Sweet Glaze (natural): While baking, whisk together powdered sugar, optional plant-based cream cheese, apple juice, and natural gelling agent dissolved in warm water until smooth and creamy.
  7. Glaze and Serve: After allowing the rolls to cool slightly, drizzle the sweet glaze generously over the top. Serve warm to enjoy the tender dough with gooey, sweet filling and tangy glaze.

Notes

  • Ensure milk is warm, not hot, to activate yeast properly.
  • Do not overfill the rolls to avoid spills and difficulty rolling.
  • Use fresh, crisp apples for best texture and flavor.
  • Allow rolls to cool slightly before glazing for better glaze adherence.
  • Keep dough covered during resting stages to prevent drying.
